This time of year, I always look forward to planting a few vegetables and herbs in my container garden. I’m still acquiring my green thumb, so I don’t go crazy with planting. I just make sure to have a couple things growing that I know I’ll be wanting to cook with during the spring and summer months. In case you missed it, earlier this week I blogged about how I love hosting a grown up pizza party girls’ night. What makes the celebration even more delicious is making homemade sauce from the tomatoes in my garden. And guys, it is so easy! I’ve posted my go-to tomato sauce recipe below. Don’t have tomato plants? Tomatoes from grocery store work perfectly well, too.
What you’ll need:
1 tablespoon olive oil
2-3 garlic cloves - minced
1 teaspoon oregano – chopped (I like to use fresh, but dried works, too!)
2 pounds diced tomatoes
1 teaspoon sugar
1/2 teaspoon kosher salt
Black pepper to taste
In a medium saucepan over low heat, warm the olive oil.
Add the garlic and cook for about a minute.
Add the tomatoes, sugar, salt, black pepper and bring to low boil.
Once sauce begins to boil, reduce heat to simmer.
Simmer uncovered for 90 minutes.
Stir in oregano.
Remove sauce from heat and let cool.
Once cooled, use immersion blender until the sauce is the consistency of you’re liking. (I prefer my tomato sauce pretty smooth, but to each their own.)
